Rice Cake Snack Cake

With all the Easter sweets behind us, Spring Break among us, and Summer on the horizon...I think it's time for a healthy snack.  You may turn your nose up and purse your lips at the thought of eating a rice cake.  But what if I told you the lightly salted variety is gluten free, has 9 whole grains, and packs a teensy 35 calories per cake?!

There are lots of ways to spice up these little cakes for a health conscious snack.

Try this for starters...


Spread 1 rice cake with 1 tablespoon of all natural peanut butter, sliced bananas, and a drizzle of honey!  Yum!!!

This is all good and well but after enjoying this snack many times, I was getting a little tired of the sticky honey dripping everywhere as I bit into the rice cake.  So, I came up with this little dip/spread to solve my problem.


Mix 2 tablespoons of all natural peanut butter and 2 tablespoons of honey into a 6oz container of Fage 0% Greek Yogurt.  Then, lather some on top of the rice cake and enjoy!  You could also use this dip for apple slices, graham crackers, strawberries, or whatever else might sound good to you!

Craving something chocolatey?  Try this easy topping...


What else can you think of?  Maybe cream cheese and sliced strawberries?!  The possibilities are endless!
