Around Christmas time, I'm always on the lookout for something easy yet delicious to give away to some special people. Not something big and fancy. Just a little something homemade that says how much I appreciate them or how thankful I am that they are around.
I would have loved to make lots more of these to go around but I only had time to make and give out 2. Yes, two...
To each of our neighbors, I gave a mason jar full of these goodies!
Thank you to the nice lady, who recently moved in across the street, for collecting deliveries when we are away, for meeting me and my son for a lunch date even though you barely knew us, and for making small talk when we walk by with our big dog.
Thank you to the sweet couple, who lives next door, for calling to make sure we are okay when the power goes out, for welcoming us into your home even though you had just sat down for your evening meal, and for sharing how much work you put into your beautiful Christmas tree full of flowered lights, decorative snow, and handmade ornaments with a full village below, even though not many will get to see it.
You are truly appreciated. Thank you for being our neighbors!
Here is how to make them:
Rolo Turtles
Ingredients:
Mini pretzel twists
Rolos, unwrapped (store bought chocolate caramel candies)
Pecan halves
Directions:
Preheat oven to 250 degrees. Line a baking sheet with pretzel twists. Top each pretzel with an unwrapped Rolo. Bake for only 4-5 minutes. Remove from the oven and top each Rolo with a pecan half pressing down gently. Place the entire baking sheet in the freezer for about 10 minutes to cool. Remove from the freezer and let the chocolate harden before stacking. Make as many as your little heart desires!
