Baked Chicken Parmesan

Do you get sick of chicken?  I do.  It's an easy choice because it can be prepared so many different ways but wow, it can be BORING!  The good thing is it's a healthy choice when prepared boneless and skinless, you just have to kick it up a notch to satisfy those taste buds!  This recipe is almost a weekly go to for me when I want an easy, quick meal that the whole family will love.
 
 

Baked Chicken Parmesan

Ingredients:

4 boneless, skinless chicken breast halves, thawed (I order ours from Schwan's.)
1 jar of your favorite spaghetti/marinara sauce (I like Rao'savailable in various flavors)
1 cup shredded mozzarella cheese
Shredded parmesan cheese
 

Directions:

Preheat oven to 350 degrees.  Place chicken breasts in 8x8 glass baking dish.  Pour about 1/2 cup of marinara sauce over the top of each chicken breast and bake covered with foil for 40 minutes.  Top each breast with 1/4 cup of mozzarella and a sprinkle of parmesan cheese.  Bake uncovered for another 5 minutes or until cheese is melted.
 
Serve with whole wheat spaghetti and a side salad or steamed veggies.  You can also add some crusty whole grain bread and olive oil for dipping!  Yum!
