Fiber One Protein Pancake

Here we are with breakfast again!

It's been shown that starting your day off with a high-protein meal can aid in weight loss.
Protein supports brain function and increases alertness in the morning.
Add in the fiber and you'll feel full longer.  A great way to start the day!


Fiber One Protein Pancake

Ingredients:

1/4 cup quick cooking oats (see more about oats here)
1/4 cup Fiber One Original Cereal
4 egg whites
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon, ground
2 tablespoons pure maple syrup
blueberries for topping

Directions: 

Generously coat a small skillet with cooking spray and preheat over medium heat.  In a small bowl, whisk together all the ingredients.  Pour the mixture into the skillet and cook until the edges start to cook, flip the pancake and finish cooking until golden brown on each side.  Top with blueberries and syrup.

Nutrition:

1 Pancake - Calories 269, Fat 2g, Carbs 27g, Sodium 275mg, Protein 18g
2 tablespoons of pure maple syrup adds 100 calories, 27g carbs, and 3mg sodium.  You could use a light syrup for less calories if you prefer.
